Mouth Watering Guacamole

I love a good guacamole, and it is so easy to make! Many are intimidated by it because it usually turns brown right away. This recipe has given me days of nice, green guac. The secret? Lime juice! I recently made this on a Saturday, and Tuesday is was still green, no plastic wrap or pits needed.

Mouth Watering Guacamole

Guacamole

  • 4 medium ripe avocados
  • 1/4-1/2 med sweet onion*, minced as finely as you like
  • 1 roma tomato*, diced as finely as you like
  • the zest and juice of two medium limes
  • 3-5 cloves of garlic, finely grated
  • 1/2-1 tsp salt, to taste

In a mixing bowl, zest and juice two limes. Finely grate garlic. Add onion, salt and avocado. Mash/mix well (either a potato masher or fork works well). Add tomato and mix in.

If you like a chunkier guac, use one avocado that is a bit firmer, dice, and add in when you add the tomato.

Avocado is a great source of healthy fats, and this is one way I get my children to eat it.

Serve with chips or tacos.

*I do try to make sure that these ingredients are organic.
