This is one of my favorite cookies. Not exactly healthy, but I only make them once a year or so, and usually just before a family gathering.
Cocoa Noile Cookies
- 6 egg whites
- 1 pound of powdered sugar
- 1 tablespoon vanilla sugar
- 1/2 cup cocoa
- 3/4 teaspoon cinnamon
- 1 pound of chopped walnuts (optional)
Preheat your oven the 325° (F). White egg whites in mixer for 5 minutes.
Gradually add sugars. Continue whipping for 15 minutes.
Remove bowl from mixer and fold in remaining ingredients.
Lightly grease two cookie sheets and drop 1 teaspoons of mixture onto pan, about 1 1/2 inches apart. Bake 10-12 minutes. Be sure to watch them carefully. They can go from underdone to over done pretty quickly.
Cool cookies on a wire rack. Store in air tight container. Cookies will keep for weeks on end.
My note: I ended up piping most of my cookies the last time I made them.
